Easy Black Bean Dip Recipe

Tailgating has always been a family tradition and is one of my favorite parts of Fall! You’ll find me in Death Valley almost every Saturday decked out in Orange! I always look forward to this fun time with family and friends enjoying the awesome weather (even if it is sometimes still 90 degrees in October in the Carolinas).  This is THE EASIEST recipe and is always a hit for a grab and go tailgate table item! Ingredients:

1 Can of Corn

1 Can of Black Beans

1 (Small) Red Onion

1 Green Pepper

1 Can Original Rotel

Italian Dressing

1 Green Pepper


Directions:

Open and drain can of corn thoroughly!

Open and drain can of black beans thoroughly! ( I like to empty the can into a colander and wash off the excess juice and pat dry)

Dice up red onion

Dice up green pepper

Mix together corn, black beans, and can of undrained rotel.  Add even parts onion and green pepper ( I typically guesstimate this portion depending on the level of pepper/onion preferred by the group).

Pour Italian Dressing (typically beginning with ¼ of a cup) over dip and stir until finding desired taste! (this is the best part of the recipe- taste testing until you get it perfectly seasoned how you like it).

Refrigerate.

Serve with tortilla chips!
