Cuban Sandwich Sliders

“As Miami Hurricanes fans living in North Carolina, my family and I make a big deal out of going to local games and cheering on our Canes! Tailgating is so much fun and we make a point of taking a family photo with all of us holding up the U at every game! This year, I found the best Cuban sliders recipe on Pinterest and even when we’re watching a game at home, my family begs me to make them. They are so delicious and have a true Cuban sandwich taste! Go Canes!”

Ingredients:

Cuban Sandwich Sliders
1 cup mayonnaise (I like to use Olive Oil Mayo)
2 Tbsp chopped fresh cilantro
2 Tbsp whole-grain mustard
1 tsp grated lime rind
¼ tsp garlic powder
1 (16-oz) jar dill pickle stackers
2 (12-oz) pkg Hawaiian sweet rolls
2 (11-count) pkg deli sliced Swiss cheese
1 lb thinly sliced deli Spanish pork (YUM)
1 lb thinly sliced deli ham
2 Tbsp butter, melted
1 Tbsp poppy seeds

Directions:

 

Preheat oven to 375°F.
Stir together mayonnaise, cilantro, mustard, lime rind and garlic powder in a small bowl.
Drain pickles, and pat dry with paper towels.
Cut rolls in half horizontally without separating rolls.
Spread mayonnaise mixture over cut sides of bread.
Layer bottom halves with one fourth of cheese, half each of pork, ham and pickles. Top each with one fourth of cheese and roll tops. (If you’re like me and don’t like pickles, feel free to leave them off the sandwich! You just need to remember which one doesn’t have pickles, before you bite into it!)
Brush melted butter over tops of rolls; sprinkle with poppy seeds.
Wrap each sandwich in foil, and bake 25 minutes or until cheese is melted.
Unwrap, and cut along perforations into small sandwiches.
